Gingered Beef and Noodle Bowl

I love me some noodle soup especially the soups that I have eaten at high end restaurants noodle bars in Atlantic City and Las Vegas. Essence has an recipe for all of us to enjoy in the section title “2010 Healthy Eating Living Guide.” during the holiday and to eat healthier going into 2010. I have not came across a good noodle soup recipe….this recipe looks quite appealing and delicious.:

Makes 4 Serving. Prep time: 10 minutes Cooking time: 20 minutes

8 cups low-sodium organic beef broth                                                                                       5 cups cooked soba noodles

1 6 inch long lemongrass stalk, cut into pieces                                                                       1 small red bell pepper quarterly and thinly sliced

1 1 1/2 inch piece fresh ginger                                                                                                       12 water chestnuts, sliced in half

1 teaspoon low sodium soy sauce                                                                                                 1 large head bok choy, leaves and 1/2  of white parts chopped

1 12 oz sirloin steak thinly sliced                                                                                                   2 scallions, thinly sliced

Bring the broth, lemongrass, ginger and soy sauce to a boil in a medium pan over medium high heat. Reduce heat to low and simmer for 10 minutes. Cook the beef in the broth, about 5 pieces at a time, for 1 minute. Remove to a plate and repeat with remaining beef. Strain the broth, discard lemongrass and ginger, and return to the pan, and bring back to a simmer. Meanwhile, rinse the cooked soba noodles(which you should prepare according to package directions) in hot tap water to rewarm, then divide among 4 large soup bowls. Divide beef, bell pepper and water chestnuts among the bowls. Cook the bok choy in the broth until leaves are wilted but ribs are still crisp, 2-3 minutes. Ladle broth and bok choy into the bowls. Serve immediately with scallion on the side for garnish. Per serving: 394 calories, 44 grams carbohydrate, 41 milligrams cholesterol, 8 grams fat, 41 grams protein, 521 milligrams

You can substitute scrimp for beef or whatever….noodle soup is delicioous and very healthy for you.
