What’s Was on the Menu for the UK Dinner at the White House?

white house garden harvest spring 2012 Whats Was on the Menu for the UK Dinner at the White House?

Chefs Kevin Saiyasak and Jeremy Kapper harvested winter greens from the Kitchen Garden on the South Lawn of the White House on March 13, 2012. Baby kale and winter greens from the garden were used in the meal served at the State Dinner in honor of Prime Minister David Cameron and Mrs. Samantha Cameron. For the largest dinner the White House has ever hosted. President Obama and  First Lady Michelle Obama celebrated their close friendship with British Prime Minister David Cameron on Wednesday evening with a lavish State Dinner for more than 320 guests. The dinner was held on the South Lawn at the White House. I am inspired from the images above of the garden growing right in my own backyard. The DMV…get into it. Start growing something to eat in your kitchens.

Guests dined on a four-course “Winter Harvest” feast, created by Executive Chef Cristeta Comerford using veggies from First Lady Obama’s Kitchen Garden for the vegetable accompaniments.

The menu was designed to symbolize the Special Relationship, with embroideries on American favorites and nods to British tradition and culinary culture.

The White House described the entree, Bison Wellington, as “a classic English dish given an American twist with the use of buffalo tenderloin,” and and  ”a perfect pairing of US and UK cultures.” The Bison herd was raised in North Dakota. Alaska provided the fish for the First Course, Crisped Halibut with Potato Crust. Dessert was a Steamed Meyer Lemon Pudding, which used Idaho Huckleberries, in another melding of US-UK tastes.

The First Course, Crisped Halibut with Potato Crust, will be served on a bed of braised baby kale ”fresh from the White House garden,” with shaved Brussels sprouts and micro cabbage sprouts, also from the Kitchen Garden. “A hint of applewood smoked bacon from a local smokehouse ties the dish together,” according to the menu guidance. The Halibut is from Alaska, according to Chef Comerford.

The Salad Course, Spring Garden Lettuces with Shallot Dressing and Shaved Radish, Cucumbers and Avocados, is “light and crisp and includes different types of greens, which are also from the Kitchen Garden.”

The dessert, Steamed Meyer Lemon Pudding, is “a nod to the traditional British treat,” the White House said.

“The pudding is prepared with Idaho Huckleberry Sauce to unite the British and American flavors. At the bottom of the pudding are Newtown Pippin Apples, which are believed to have been developed in Queens, New York in the early-18th century, and were grown by Thomas Jefferson and George Washington.”

My mouth is watering from reading the menu for the UK dinner at the White House. Foodies are salivating everywhere….well at least I am. YUMMY!

That’s where Queen Victoria comes in: the Newtown Pippin Apples “serve as a symbol of the American-British partnership—the apple was so favored by Queen Victoria that she had the customs duty on them eliminated,” the White House said. That’s a pretty amusing apple choice for a President who has spent a lot of effort trying to change America’s tax system.
